Big Papa BBQ LLC is a family-owned barbecue food truck catering to weddings and other special events in Colfax, Wisconsin, and the surrounding areas. This business is a tribute to the legacy of Fred Sevier, or "Big Papa," as he was known to his family and friends. Fred was a war veteran who loved serving his community through great food and his specialty barbecue sauce. Though Fred passed away in 2019, Big Papa BBQ is a celebration of his life and the distinctly Southern, wood-smoked barbecue cuisine he loved so much. Big Papa BBQ offers authentic Southern wood-smoked BBQ cuisine in Colfax, WI, and the surrounding areas. We specialize in traditional barbeque staples like pulled pork sandwiches with mac and cheese and baked beans. We also love making a unique menu using the event theme, like pulled pork bruschetta and smoked chicken wings. Amy will work with you personally to help your vision come to life! We have several references available upon request. Herbie and Amy Sevier brought Big Papa BBQ to the Chippewa Valley and surrounding areas for the first time in 2020 with the food truck they inherited from Herbie's late father, Fred. The food truck and Herbie's skill on the smoker have been so well received that both Herbie and Amy were able to retire from corporate and run the truck and catering full-time with the help of their children and close friends. Serving meals to their community has become this family's love language. With the blessing of God, the business continues to flourish. Herbie has a special way of showing love through his cooking, and he gives credit to his father, Fred, for teaching him all he knew before he passed away. Fred (Big Papa) Sevier was born in 1946 in Augusta, Arkansas, and embodied Christian values throughout his lifetime. He graduated from George Washington Carver High School before joining the Army, serving as an Infantryman and Mess Specialist (cook) during the Vietnam War. Big Papa was in the US National Guard until 1992, continuing his lifelong commitment to service. He later retired from Union Pacific Railroad in 2010. Big Papa enjoyed a very active life, as a member of the American Legion, a Mason, and an avid fisherman. He spent thousands of hours perfecting his famous BBQ sauce, mustard slaw, homemade sausage, fried catfish, ribs, and rib tips. He believed that everyone should be able to serve their families, and his catering prices always reflected that. He served his community for over 40 years, one meal at a time. Big Papa passed away in 2019. He lived a full life and was a wonderful example of God’s love and grace to five children, twenty grandchildren, five great-grandchildren, and a host of nieces, nephews, cousins, and friends. To keep Big Papa’s legacy alive, Herbie and Amy Sevier have brought the business to the Chippewa Valley, serving distinctly Southern wood-smoked BBQ, fresh off the smoker onsite. Herbie, Amy, and their team look forward to serving you and your loved ones.
